Sooner or later, Sriratana plans to give a brick and mortar another chance. First she has a wedding to plan and a range of sauces to market from next year with the chili jam, nam phrik pao.
But before all that, she has a Foodball to crush.
That’s right, Sriratana is bringing his long-running virtual restaurant in northern Thailand, Pink Salt, to the Kedzie Inn on November 15 for the twelfth week of Monday Night Foodball, the Reader weekly pop-up of the current chef.
She brings home-grown makrut lime leaves, coriander roots and seeds to flavor her lemongrass fried chicken, and her own pickled mustard leaves to add punch to her khao soi beef, the northern curry noodles. which are his most requested dish – for vegans there is a version of roasted delicata squash.
